作者徐嘉忆(2019)在《秘鲁鱿鱼卤制风味产品的加工工艺及贮藏品质研究》一文中研究指出:秘鲁鱿鱼作为我国远洋捕捞的主要品种之一,成为近年来我国水产品加工行业的重点开发对象。但目前市场上现有的秘鲁鱿鱼产品主要以简单加工处理的冰鲜原料为主,消费对象主要面向餐饮行业或家庭烹饪,产品附加值较低。深加工产品主要有鱿鱼丝、烟熏鱿鱼片(圈)、鱿鱼干制品等,产品结构相对较为单一,企业急需开发新型营养美味、市场畅销的新型鱿鱼制品。卤制是在中式肉制品加工中最有特色的一种加工工艺,以绝味鸭脖为代表的酱卤肉制品,因其独特风味深受我国消费者的喜爱。但卤制工艺在水产品加工中的应用较少,现有的卤料配方和卤制工艺均不完善,有待于进一步研究开发。鉴于此,本文以秘鲁鱿鱼为研究对象,首先研究优化了适合秘鲁鱿鱼卤制加工的工艺参数和卤制配方,之后探讨了不同杀菌方式及包装方式对卤制鱿鱼制品品质的影响,以期研制出一套卤制风味鱿鱼休闲制品加工工艺和产品,为提高秘鲁鱿鱼的食用价值、商业价值和开发利用率,以及水产品加工模式的转变提供参考。具体研究结果如下:1.研究确定了卤制鱿鱼风味产品的加工工艺流程为:原料选择与解冻→清洗切段→除酸→腌制→煮制→烘烤→卤制→真空包装→杀菌→冷却→成品。卤制鱿鱼风味产品最终的卤料底物配方为:每50 g鸡汤中,添加酵母提取物1.2 g,黄豆酱1.2 g,琥珀酸二钠0.04 g,甜面酱1.0 g,I+G 0.06 g,味精0.04 g。卤料的最终配方为:每50 g底料中,辣椒粉2.0 g,花椒0.3 g,八角0.08 g,桂皮0.07 g,陈皮0.06 g,白芷0.05 g,香叶0.03 g,白豆蔻0.025 g,小茴香0.045 g,砂仁0.03 g,良姜0.025 g,草果0.05 g,丁香0.04 g,山奈0.03 g。采用恒温振荡卤制的方式辅助香料物质的风味成分进入到鱿鱼肌肉的内部,使得鱿鱼产品卤香味十足,滋味丰富。通过单因素和正交试验优化确定了最终卤制鱿鱼风味产品的主要工艺参数为:卤制时间80 min,卤制温度90℃,料水比为1:10。2.采用不同的杀菌方式对卤制鱿鱼风味产品进行处理,分析其室温(25℃)贮藏过程中产品品质的变化。结果发现,未杀菌组样品在第四天微生物数量超过5×10~4 CFU/g,巴氏杀菌组样品在第六天微生物数量超过5×10~4 CFU/g,但高温杀菌组处理的卤制鱿鱼风味产品在贮藏期60天内微生物数量未达到最大限值。三个处理组中,产品的硬度、咀嚼性随着贮藏时间的延长呈上升的趋势,而弹性变化与之相反。未杀菌组和巴氏杀菌组样品中的主要挥发性成分是醇类、酯类、酮类、醛类,其中酯类物质含量呈逐渐下降的趋势,高温杀菌组的样品中没有检测到酯类物质,但是发现了具有肉香的吡嗪类物质。随着贮藏时间的延长,所有样品的硫代巴比妥酸值也相应增加。经过电子鼻和电子舌的测定后,发现巴氏杀菌组样品风味特征较分散,差异较大,鲜味感应信号强度均呈先下降后升高的趋势;121℃15 min高温杀菌组的样品风味特征较集中,差异不明显,而115℃ 20 min样品风味与前者相反,鲜味感应信号强度则是呈先升高后下降的趋势。三组不同杀菌方式处理的样品感官评分差异不大。总之,高温杀菌能够较好的延长产品保质期,但该杀菌方式对风味物质、质构破坏严重、脂质氧化程度较高;然而巴氏杀菌对产品风味、质构影响较小,但在延长产品保质期方面效果不佳。3.采用不同的包装方式对未杀菌卤制鱿鱼风味产品进行包装处理,研究其在不同贮藏温度(25℃、4℃)下产品品质的变化。结果发现,4℃下普通包装组样品的微生物数量在第四天超过最大限值,真空包装组样品的微生物数量在第六天超过最大限值,气调包装则将产品的贮藏期延长至八天;25℃下普通包装组、真空包装组和气调包装组样品的微生物数量超过限值的贮藏时间分别为4天、4天和6天。三组包装样品中,检测到的主要挥发性成分是醇类、酮类、醛类。气调包装组样品硬度、咀嚼性、弹性随着贮藏时间的延长大致呈下降的趋势。所有样品的硫代巴比妥酸值与贮藏时间成正比。经过电子鼻和电子舌的测定可知,4℃下不同包装方式的样品风味特征分散明显,差异显著;而25℃下真空包装和普通包装样品的风味特征相对集中,差异不显著;气调包装组样品的风味特征则与上述样品相反。所有处理组样品的鲜味感应信号强度均呈现先下降后升高的趋势,同时也发现三组不同包装方式样品的感官评分差异不大。总之,气调包装处理能较好地延长卤制鱿鱼风味制品的保质期,且在贮藏过程中该包装方式对样品的风味、质构特性、硫代巴比妥酸值的影响都较小。
